Recipe: Turkey, Bean and Cabbage Soup

Ingredients
1 pound ground turkey
1 teaspoon garlic salt
1 teaspoon garlic powder
1/2 teaspoon salt
¼ teaspoon pepper
2 celery stalks, diced
2 cans (16 ounces) beans of your choice (or a mix of kidney, black beans and pinto beans), rinsed and drained
1 bag of coleslaw or shredded cabbage (16 ounces)
2 cups of shredded carrots
1 cup of diced peppers (green, red or any color)
1 can (28 ounces) diced tomatoes, undrained
1 box (32 ounces) of low fat, no salt added chicken broth
2 to 3 cups of water
Other seasonings to add, if desired: basil, Italian and cumin – season until your desired taste
Directions
In a large pan, cook ground turkey over medium heat until no longer pink; drain. Add in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 1 hour.
Serves 10 to 12 people.
